I could apologise again for disappearing from my blog, but I think it has become much too frequent an event to do so. (But sorry anyway!) I've been trying to stick to a healthy diet as much as possible which makes breakfast choices now quite limited (when you cut out sugar (except natural) and animal products). To be honest, I haven't followed this diet quite as strictly as I would've liked to within the past few weeks, however I was doing very well the first month and a half. I thought I better start posting some new recipes here to keep me motivated to eat well.
I really enjoyed this breakfast, hope you do too!
Rolled rice porridge with blueberries and almonds
1/2 cup brown rice flakes
1/2-2/3 cup water *
1 tbs flax (linseed) meal
dollop of almond spread
handful of blueberries
handful of almonds (flaked or whole or any other nuts)
dash of soy, rice or almond milk (optional)
1. Combine rice flakes and water in a small bowl.
2. Microwave on high for 3 minutes stirring after 1 minute 30 seconds.
3. Stir in soy, rice or almond milk if desired. Stir in almond spread and flax meal and top with blueberries and almonds.
4. Enjoy!
NOTES: * I tend to use approximately the same amount of water to the amount of rice flakes however I like a fairly dry consistency. Add more water/milk if you prefer it runny.
