wholemeal hotcakes


Sincere apologies for the lack of breakfast food appearing on my blog! I have in fact still been keeping up with my breakfast project, I just haven't found the time to post the photos... But here are some pancakes I had last week... I call them hotcakes as they definitely do remind me of McDonald's hotcakes, although a healthier version made with wholemeal flour (and then drenched with honey or maple syrup - so maybe they aren't so healthy after all....) 


Wholemeal hotcakes

Makes 3 (Or several smaller ones if you wish)

What you need...
1/2 cup wholemeal self raising flour
pinch of salt
1/2 cup milk
1 egg, separated
1 tsp caster sugar
1 tbsp oil

What to do...

1. Sift flour into a bowl. Add salt.

2. In another bowl, whisk together egg yolk, sugar and milk followed by oil. Mix well. Stir into flour mixture until just combined.

3. Whisk egg white until soft peaks form, then fold into the above mixture.

4. Heat a large, non-stick frying pan over medium heat and spray lightly with oil.
Using about 1 ladleful of batter, cook hotcakes until bubbles appear on the surface.Turn over a cook for a few minutes or until golden.

 Serve with your choice of toppings!
