This salad was leftover from last nights dinner, I topped it with a poached egg and some chilli salt. The dressing is the exact same my host mother used to make in France and the best part is that it's so simple, easy and delicious!
Spinach, snow pea and pine nut salad
What you'll need...
1 x 150g pkt spinach leaves
200g snow peas, blanched
1/4 cup pine nuts, toasted
For the dressing
3 tbs olive oil
3 tbs apple cider vinegar
1 clove garlic, crushed
Combine olive oil, vinegar and garlic in a bowl. Season with salt and pepper.
Toss spinach, snow peas and pine nuts together. Add dressing just before serving.
For breakfast: top with poached eggs and chilli salt (optional).
Or serve as a side dish to accompany lunch or dinner!
