Day seventeen - egyptian eye

One of the dishes I remember my Dad making for me when I was little was Egyptian eye. He used to call it that but I'm not sure whether anyone else knows it by this name. It's also called egg in a basket, egg in a hole etc... 


 


It is a very simple dish - basically you cut a hole in the bread (you can cut it with a cookie cutter into an interesting shape) and fry it with a little bit of butter and pop an egg into the middle. When the underside is browned you flip it. It is your choice whether you cook it fully or leave the yolk runny.


My boyfriend and I had fun cooking this dish this morning... we attempted to cut a heart shape out of the bread but found that it was too small so it didn't really show... I just drew one out of tomato sauce instead :)
